Previ Culinary: Chia Seed Pudding

We all remember the chia pet commercials on TV from our childhood, but did you know that those little tiny chia seeds that sprout the bright green grass are also an extremely nutritious food that we can eat in a variety of different ways? One of the most popular ways is to make it into a pudding, and here’s why.

Chia seeds are a great source of fiber, protein, calcium, antioxidants, and omega 3 fatty acids. They have an amazing ability to absorb 9 to 12 times their weight in water, giving you a satisfied full feeling and that great texture that is reminiscent of tapioca pudding.  Not a fan of the texture? That’s ok! After your pudding is ready and the chia seeds have absorbed the liquid, simply pour the pudding into a blender or food processor and blend until smooth.  You will still get all of the health benefits but with a smoother texture.

This recipe is incredibly versatile and easy. Use any kind of milk, yogurt, or liquid mixture you like. Chia is not picky! You may want to skip the sweetener in the recipe or substitute it with another option such as honey or agave. Flavor it with cocoa powder, fresh pureed fruit, fresh fruit juices, unsweetened jam/jelly or even extracts – the possibilities are endless. Once you make it you will soon see that these amazing little seeds aren’t just for growing a chia pet!

Basic Chia Seed Pudding Recipe


4 tbsp chia seeds
1 cup coconut milk
1 cup almond milk
2 tbsp maple syrup
1/4 tsp vanilla extract
1/4 tsp cinnamon
pinch of salt



1. Combine all ingredients in a mason jar and shake well. Refrigerate overnight to thicken.

2. Enjoy or blend in blender or food processor for a smooth consistency.
